cucumber & avocado salad

This is my favorite salad of all time. That may not be a powerful statement to those who know me well since I don’t actually like most salads (I’m a sautéed vegetable kind of girl). However, you’ll have to trust me and try this salad. Somehow, simple ingredients like crisp cucumber, creamy avocado, and a simple balsamic dressing come together to make something wonderful.

Ingredients
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 clove of garlic, minced
Salt & pepper to taste
1 avocado, pitted and diced
4 Persian cucumbers, thinly sliced

Instructions

  1. Whisk together the olive oil, balsamic vinegar, and garlic until blended. Season with salt and pepper.
  2. Add the cucumbers and avocado to the bowl and toss to combine. Serve immediately.

Notes

  • This recipe calls for Persian cucumbers and I highly recommend using them over other varieties. Persian cucumbers are denser than other types, with almost no watery seeds to speak of, and their flavor is fresh and concentrated. They will add a crispness that the salad needs.
  • There’s no need to bust out your thick, expensive balsamic vinegar for this recipe. Regular balsamic will work well.
  • This recipe is best served immediately since the avocados will brown over time.
